I grew onions in my garden at home this year and needed a new recipe to use them up before they go bad. The little ones tend to turn fast but just look at how cute they are! Its worth it.
This was a super simple dish: all I did was bake the bacon until crisp, chop the onions and sweet potatoes so that they were about the same size, swap the bacon for veggies and roasted the veggies until they were tender. Once they were tender, I crumbled up the bacon over the top of the veggies and served the dish.
If you want to make the dish yourself, bake 4-6 slices of bacon at 350F, 2 large onions and 2 large sweet potatoes. Enjoy!
