Sweet Potato and Apple Soup

This recipe is about as ‘ready for fall’ as you are going to get!  Although I suppose you could switch out the sweet potato for butternut squash or pumpkin to up the ante….

This is definitely a soup that I’ll be repeating! Will I try and tweek it?  Definitely.  There are so few recipes that I don’t try and make my own but this one is a really great base for a healthy recipe.  What’s so great about it?  Its insanely healthy, quick to pull together and its creamy without adding any cream to it!  There are a ton of wins here!

Improvements?  Roast the veggies, switch out butter for EVOO while they’re in the oven, and increase the herbs in the soup.  That’s it.  The proportions are good.  And I’ve learned my lesson to puree the soup if I decide to keep the dirty dishes to a minimum…  I’m pretty sure I’ll be doing that either way…
