This salad was served at my wedding. I wanted something a little more unique that people could really enjoy and get excited about while still having a salad option and this was a bit hit! This was definitely a favorite that day and the ones that followed as we finished off leftovers before leaving for our honeymoon.
Since all of our food was catered (minus the cake), I wanted to make my own version with a home-made vinaigrette so that I could bring back special memories from our wedding day throughout the summer. Here goes nothing:
- 1 English cucumber, sliced into rounds then in half
- 1 cup blueberries
- 3 oz feta
- 1 Tbsp EVOO
- 2 tsp red wine vinegar
- 1 tsp basil
- salt and pepper to taste
Leaving vinegar to the side, toss ingredients together. Add vinegar and toss again. Enjoy!
Note: I enjoy this as a salad for one as a full meal. It could easily be divided to serve four as a small side salad or doubled or tripled to suit.
