My over-ripe avocado and over-ripe bananas just had a baby: Avocado Banana Bread. Neither fruit was very pretty by the time I made this bread but they sure did turn out a pretty loaf of quick bread.
I added in a few walnuts and craisins to add a bit more interest to the bread. Since there is so little banana in the bread, there is no distinctive banana flavor. If you’re looking for that, try my favorite banana bread recipe. On the other hand, it makes it a really great quick bread for additions/additional flavorings. Next time I will probably try playing with the spices to see how it comes out. The only down-side is that this bread needs to be checked with a knife or toothpick until it comes out clean. It created a wonderful crust on top but was slightly under-baked on the inside. Its one of the few dishes that isn’t fully cooked when it bounces back!
