Just wanted to share that while canning is definitely worth the time investment, there can be a bit of heartbreak involved when things don’t work out as planned. I had been canning all day but knew it was time to end the night when the bottom of one of the last sets of jars cracked off. New jar. Potential hairline crack or fracture or whatever its called. Completely disheartening. I didn’t bother to transfer the next batch. I finished cooking it, cooled it as I cleaned up a bit then went to bed to finish processing the next day.
