Spicy Roasted Pumpkin Seeds


I was roasting one of the last pumpkins to survive into the winter season and decided to spend a bit of extra time to try out roasting the seeds.  Worth it?  Yep – anytime I can use up food I already have is a win in my book.  I found my starter recipe here from Oh She Glows.  I changed it up a bit by using chili powder, chili flakes and cayenne pepper powder to give it a bit of a kick.  I had meant to only add a tiny pinch of chili powder but that didn’t happen so I kept adding the spicy stuff from the pantry.  Why not keep it going?

That being said, I’ll probably try out a few other recipes before I settle on a favorite.  This one didn’t quite make the cut.  Most likely I’ll try:

Now I just have to be patient enough to wait another year for fresh pumpkins…
